Ingredients
- 1 (14-oz) jar quartered marinated artichoke hearts
- 1 (2-count) pkg oven-fired pizza crusts
- 1 (17-oz) family-size container roasted red pepper hummus (or use roasted garlic hummus)
- 1 cup oil-packed sliced sun-dried tomatoes, drained
- 1 small red onion, thinly sliced
- 2 cups crumbled feta cheese
- 1 cup pitted kalamata olives
Instructions
- Preheat oven to 425°F. Drain artichoke hearts, reserving oil from jar. Brush edges of pizza crusts with oil from jar.
- Spread desired amount of hummus on each crust. Top with artichokes, tomatoes, onion, cheese, and olives. Bake directly on middle oven rack 10 minutes or until crusts are golden brown.
Side Dish Ingredients
- 1 (16-oz) strawberries, halved
- 2 (4.4-oz) pkg blueberries
- 3 Tbsp sugar (or use honey)
- ¼ cup chopped fresh mint
Side Dish Instructions
- Gently toss together berries, sugar, and mint in a bowl. Chill fruit, if time permits.
