Beer-Battered Fish Salad
Ingredients
- 10 frozen beer-battered fish fillets
- 1 (2.52-oz) pkg fully cooked bacon
- 1 (10-oz) pkg spinach
- 1 (16-oz) pkg sliced mushrooms
- 1 red onion, very thinly sliced
- 1 (12-oz) bottle refrigerated red wine vinaigrette
- 2 avocados, chopped
Instructions
- Bake fillets according to package directions. Drain well on paper towels.
- Meanwhile, reheat bacon in a large skillet over medium-high heat, turning often, until crisp. Tear into pieces.
- Toss together spinach, mushrooms, onion, and bacon in a large bowl. Drizzle with desired amount of vinaigrette; toss.
- Coarsely chop fish into bite-size pieces. Add to salad. Add avocado. Season with salt and pepper to taste.
