Falafel Bowls
Ingredients
- 2 (8-oz) pkg falafel mix
- 1 (10-oz) pkg baby spinach-spring mix blend
- 1 pint grape tomatoes, halved
- 1½ cups crumbled feta cheese
- 1 cup fresh parsley sprigs
- 1 cup pitted kalamata olives
- 1 English cucumber, thinly sliced
- ½ cup tahini dressing (or use a goddess vinaigrette)
Instructions
- Preheat broiler. Prepare falafel according to package directions for broiling.
- Meanwhile, divide greens, tomatoes, cheese, parsley, olives, and cucumber among 6 bowls. Top with falafel; drizzle with dressing.
