Falafel Bowls

Ingredients

  • 2 (8-oz) pkg falafel mix
  • 1 (10-oz) pkg baby spinach-spring mix blend
  • 1 pint grape tomatoes, halved
  • 1½ cups crumbled feta cheese
  • 1 cup fresh parsley sprigs
  • 1 cup pitted kalamata olives
  • 1 English cucumber, thinly sliced
  • ½ cup tahini dressing (or use a goddess vinaigrette)

Instructions

  1. Preheat broiler. Prepare falafel according to package directions for broiling.
  2. Meanwhile, divide greens, tomatoes, cheese, parsley, olives, and cucumber among 6 bowls. Top with falafel; drizzle with dressing.
