Ingredients

  • 12 oz penne pasta
  • ½ cup olive-oil mayonnaise
  • ½ cup sour cream
  • 2 Tbsp lemon juice
  • ¼ cup chopped fresh parsley
  • ½ tsp salt
  • ½ tsp pepper
  • 4 (5-oz) cans wild albacore tuna, drained and flaked
  • 1 (15.5-oz) can cannellini beans, drained and rinsed
  • 2 stalks celery, chopped

Instructions

  1. Cook pasta according to package directions; drain and rinse with cold water.
  2. Whisk together mayonnaise, sour cream, lemon juice, parsley, salt, and pepper in a large bowl. Add tuna, beans, celery, and pasta; toss. Chill until ready to serve.

  • 1 Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • 1 Tbsp honey
  • 3 Tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 2 (5-oz) pkg baby arugula
  • 3 sweet, crisp apples, sliced

Side Dish Instructions

  1. Whisk together vinegar, mustard, honey, oil, salt, and pepper in a large bowl; add arugula and apples. Toss.
