Ingredients

  • 1 fresh plant-based burger patty
  • ⅛ tsp ground cumin
  • 2 Tbsp water
  • ¾ cup canned black beans, drained and rinsed (or use pinto beans)
  • ¾ cup canned corn
  • 3½ cups tortilla chips (4 oz)
  • ½ cup shredded Cheddar cheese
  • 3 Tbsp sliced black olives, drained
  • ⅓ cup fresh salsa
  • 1 green onion, sliced

Instructions

  1. Preheat broiler. Crumble plant-based beef into a large skillet; cook over medium heat 6 to 8 minutes or until browned. Stir in cumin and water; cook 3 minutes or until thickened. Add beans and corn; cook 3 minutes or until thoroughly heated.
  2. Spread chips on a rimmed baking sheet. Top with plant-based beef mixture, cheese, and olives. Broil 2 minutes or until cheese melts. Top with salsa and onion.
