Southwest Nachos
Ingredients
- 1 fresh plant-based burger patty
- ⅛ tsp ground cumin
- 2 Tbsp water
- ¾ cup canned black beans, drained and rinsed (or use pinto beans)
- ¾ cup canned corn
- 3½ cups tortilla chips (4 oz)
- ½ cup shredded Cheddar cheese
- 3 Tbsp sliced black olives, drained
- ⅓ cup fresh salsa
- 1 green onion, sliced
Instructions
- Preheat broiler. Crumble plant-based beef into a large skillet; cook over medium heat 6 to 8 minutes or until browned. Stir in cumin and water; cook 3 minutes or until thickened. Add beans and corn; cook 3 minutes or until thoroughly heated.
- Spread chips on a rimmed baking sheet. Top with plant-based beef mixture, cheese, and olives. Broil 2 minutes or until cheese melts. Top with salsa and onion.
