Sun-Dried Tomato and Goat Cheese Hummus
Ingredients
- 1 (8.5-oz) jar oil-packed sundried tomatoes
- ¼ cup tahini paste
- ¼ cup water
- 3 Tbsp lemon juice
- 1 (15-oz) can chickpeas, drained and rinsed
- 1 (4-oz) log goat cheese
- ¼ cup pine nuts
- ¼ cup fresh basil leaves
- 1 (9.7-oz) pkg multigrain crispbread
Instructions
- Drain tomatoes, reserving oil. Process tomatoes, ¼ cup oil (from jar), tahini paste, ¼ cup water, lemon juice, chickpeas, and goat cheese in a food processor until smooth. Season with salt and pepper to taste .
- Spoon into a serving bowl. Drizzle hummus with remaining sun-dried tomato oil.
- Sprinkle with pine nuts, basil, and additional crumbled goat cheese, if desired. Serve with crispbreads and assorted vegetables.
