Sweet Pea and Ricotta Hummus

Ingredients

  • 2 cups frozen sweet peas, thawed
  • 1 (15-oz) carton whole-milk ricotta cheese
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh mint
  • 1 Tbsp olive oil
  • 1 tsp lemon zest
  • 1 (9.7-oz) pkg light rye crispbread

Instructions

  1. Process peas, ricotta, Parmesan, mint, oil, and lemon zest in a food processor until smooth. Season with salt and pepper to taste.
  2. Spoon into a serving bowl. Garnish with additonal peas, olive oil, and fresh mint, if desired. Serve with rye crispbreads and assorted vegetables.
