Sweet Pea and Ricotta Hummus

Ingredients
- 2 cups frozen sweet peas, thawed
- 1 (15-oz) carton whole-milk ricotta cheese
- ½ cup freshly grated Parmesan cheese
- ¼ cup fresh mint
- 1 Tbsp olive oil
- 1 tsp lemon zest
- 1 (9.7-oz) pkg light rye crispbread
Instructions
- Process peas, ricotta, Parmesan, mint, oil, and lemon zest in a food processor until smooth. Season with salt and pepper to taste.
- Spoon into a serving bowl. Garnish with additonal peas, olive oil, and fresh mint, if desired. Serve with rye crispbreads and assorted vegetables.
