Sweet Chili Shrimp Stir-Fry

Ingredients

  • ¼ cup sweet chili sauce
  • 3 Tbsp low-sodium soy sauce
  • ½ Tbsp minced garlic
  • 1 lb peeled and deveined, large raw shrimp
  • 1 Tbsp canola oil
  • ½ (20-oz) pkg frozen broccoli stir-fry

Instructions

  1. Whisk together chili sauce, soy sauce, and garlic in a bowl.
  2. Cook shrimp in hot oil in a large skillet over medium-high heat until shrimp just turn pink; remove from skillet.
  3. Cook stir-fry mix according to package directions in skillet. Add chili sauce mixture, and cook until thoroughly heated. Stir in shrimp; cook 1 minute.

  • 1 (10-oz) pkg frozen riced cauliflower 
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook cauliflower according to package directions. Stir in salt and pepper.
