Mushroom and Cauliflower Pork

Ingredients

  • ½ (12-oz) pkg cauliflower florets
  • 1 lb boneless center cut pork loin chops
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp butter
  • 1 (8-oz) pkg sliced mushrooms
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • ¼ cup low-sodium chicken broth (or use vegetable broth)
  • 1½ tsp chopped fresh thyme (or use ½ tsp dried)

Instructions

  1. Cook cauliflower according to package directions.
  2. Meanwhile, sprinkle pork with salt and pepper. Cook pork in a large nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes per side or until done.
  3. Melt butter in another large skillet. Add mushrooms, onion, and garlic; cook 8 minutes or until browned. Add cauliflower, pork, broth, and thyme; cook 2 minutes or until thoroughly heated.

  • 1 (24-oz) pkg refrigerated mashed sweet potatoes
  • 1½ tsp chopped fresh thyme (or use ½ tsp dried)

Side Dish Instructions

  1. Cook potatoes according to package directions. Transfer to a bowl; stir in thyme.
