Beef Chili Verde

Ingredients

  • 1 lb plant-based ground beef
  • ½ onion, chopped
  • ½ cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 Tbsp chili powder
  • 1½ tsp ground cumin
  • 1 cup salsa verde
  • ½ (14.5-oz) can low-sodium vegetable broth
  • ½ (14.5-oz) can no-salt-added petite-diced tomatoes
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook plant-based beef, onion, bell pepper, garlic, chili powder, and cumin in a Dutch oven over medium heat, stirring often, until beef is browned and crumbly.
  2. Add salsa, broth, and tomatoes; bring to a boil, reduce heat, and simmer 15 minutes. Stir in cilantro.
