Deconstructed Black Bean Burrito Bowls

Ingredients

  • 3 (8.8-oz) pouches microwavable brown rice
  • 1 (9-oz) pkg chopped romaine lettuce
  • 2 (15-oz) cans low-sodium black beans, drained and rinsed
  • 1 cup vegan shredded mozzarella cheese
  • 2 avocados, thinly sliced
  • 1 cup fresh pico de gallo
  • ½ (3.5-oz) pkg vegan tortilla strips
  • 2 green onions, chopped
  • ¾ cup creamy vegan dressing

Instructions

  1. Cook rice according to package directions.
  2. Arrange rice, beans, cheese, avocado, pico de gallo, and tortilla strips in 6 shallow bowls.  Sprinkle with onions; serve with dressing on the side.

Side Dish Ingredients

  • 4 zucchini, halved crosswise and quartered
  • 2 Tbsp olive oil
  • 1½ tsp taco seasoning

Side Dish Instructions

  1. Brush both sides of zucchini with oil; sprinkle with seasoning.
  2. Cook zucchini, in batches, in a large cast-iron skillet over medium-high heat 2 minutes per side or until blistered.
