Spaghetti Carbonara
Green Peas with Basil
Ingredients
- ½ (16-oz) pkg whole-grain spaghetti
- 3 slices center cut bacon, chopped
- 2 small cloves garlic, minced
- 2 large eggs (see Note)
- 6 Tbsp freshly grated Parmesan cheese
- ½ tsp pepper
Instructions
- Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
- Meanwhile, cook bacon in a large deep skillet over medium heat 10 minutes or until crisp. Remove bacon from skillet, reserving drippings in skillet.
- Add garlic to skillet; cook 1 minute. Add pasta to skillet; toss. Cook 2 minutes or until very hot.
- Whisk together eggs and cheese in a bowl. Add egg mixture and bacon to hot pasta in skillet; toss using tongs. Add ¼ cup hot pasta water and pepper; toss.

- ½ onion, chopped
- 1½ tsp olive oil
- 1 (8-oz) pkg frozen green peas, thawed
- ¼ cup low-sodium chicken broth
- ¼ tsp salt
- ¼ tsp pepper
- 1 to 2 Tbsp chopped fresh basil
Side Dish Instructions
- Sauté onion in hot oil in a saucepan over medium-high heat 5 minutes or until tender. Add peas, broth, salt, and pepper; cook 5 minutes or until thoroughly heated. Stir in basil.
