Spaghetti Carbonara

Green Peas with Basil

Ingredients

  • ½ (16-oz) pkg whole-grain spaghetti
  • 3 slices center cut bacon, chopped
  • 2 small cloves garlic, minced
  • 2 large eggs (see Note)
  • 6 Tbsp freshly grated Parmesan cheese
  • ½ tsp pepper

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Meanwhile, cook bacon in a large deep skillet over medium heat 10 minutes or until crisp. Remove bacon from skillet, reserving drippings in skillet.
  3. Add garlic to skillet; cook 1 minute. Add pasta to skillet; toss. Cook 2 minutes or until very hot.
  4. Whisk together eggs and cheese in a bowl. Add egg mixture and bacon to hot pasta in skillet; toss using tongs. Add ¼ cup hot pasta water and pepper; toss.

Side Dish Ingredients

  • ½ onion, chopped
  • 1½ tsp olive oil
  • 1 (8-oz) pkg frozen green peas, thawed
  • ¼ cup low-sodium chicken broth
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 to 2 Tbsp chopped fresh basil

Side Dish Instructions

  1. Sauté onion in hot oil in a saucepan over medium-high heat 5 minutes or until tender. Add peas, broth, salt, and pepper; cook 5 minutes or until thoroughly heated. Stir in basil.
