Moroccan Meatball Bowls

Ingredients

  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • ⅛ tsp ground turmeric
  • ½ lb lean ground beef
  • 1 clove garlic, minced
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 2 Tbsp olive oil, divided
  • ½ lemon
  • ½ cup whole wheat couscous
  • ¼ cup golden raisins
  • 1 (6-oz) pkg baby spinach
  • ¼ cup plain Greek yogurt

Instructions

  1. Combine coriander, cumin, paprika, and turmeric in a small bowl; spoon 1 tsp mixture into a large bowl.
  2. Combine 1 tsp spice mixture, beef, garlic, and ⅛ tsp each salt and pepper; shape into 2-inch balls.
  3. Cook meatballs in 1 Tbsp hot oil in a large skillet over medium-high heat 8 to 10 minutes, turning occasionally, or until meatballs are done.
  4. Meanwhile, grate zest and squeeze juice from lemon half. Prepare couscous according to package directions; stir in raisins and lemon zest while couscous stands.
  5. Toss together warm couscous, spinach, and meatballs in a bowl.
  6. Stir together yogurt, lemon juice, remaining spice mixture, ⅛ tsp each salt and pepper, and 1 Tbsp oil. Drizzle dressing over meatballs.
