Moroccan Meatball Bowls

Ingredients
- ½ tsp ground coriander
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ⅛ tsp ground turmeric
- ½ lb lean ground beef
- 1 clove garlic, minced
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 2 Tbsp olive oil, divided
- ½ lemon
- ½ cup whole wheat couscous
- ¼ cup golden raisins
- 1 (6-oz) pkg baby spinach
- ¼ cup plain Greek yogurt
Instructions
- Combine coriander, cumin, paprika, and turmeric in a small bowl; spoon 1 tsp mixture into a large bowl.
- Combine 1 tsp spice mixture, beef, garlic, and ⅛ tsp each salt and pepper; shape into 2-inch balls.
- Cook meatballs in 1 Tbsp hot oil in a large skillet over medium-high heat 8 to 10 minutes, turning occasionally, or until meatballs are done.
- Meanwhile, grate zest and squeeze juice from lemon half. Prepare couscous according to package directions; stir in raisins and lemon zest while couscous stands.
- Toss together warm couscous, spinach, and meatballs in a bowl.
- Stir together yogurt, lemon juice, remaining spice mixture, ⅛ tsp each salt and pepper, and 1 Tbsp oil. Drizzle dressing over meatballs.
