Strawberry-Ricotta French Toast Sandwiches

Ingredients

  • ½ cup milk
  • 1 large egg
  • ½ tsp baking powder
  • ¼ tsp vanilla extract
  • Pinch of salt
  • ¼ cup ricotta cheese
  • 4 (1.6-oz) slices sourdough bread
  • ½ cup sliced strawberries
  • 2 Tbsp honey

Instructions

  1. Whisk together milk, egg, baking powder, vanilla, and salt in a shallow dish.
  2. Spread 1 Tbsp ricotta on each bread slice. Arrange strawberries on 2 slices. Drizzle honey over berries. Top with remaining bread, ricotta side down. Dip sandwiches in milk mixture, allowing excess to drip off.
  3. Heat a griddle or nonstick skillet coated with cooking spray over medium heat. Cook 4 minutes per side or until golden brown.

  • ¼ cup sliced almonds
  • 1 (5-oz) pkg spring mix
  • ¼ cup thinly sliced red onion
  • 2 Tbsp vegetarian balsamic vinaigrette

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat until fragrant; cool. Toss together spring mix, onion, and nuts in a bowl. Drizzle with desired amount of vinaigrette; toss.
