Strawberry-Ricotta French Toast Sandwiches
Spring Mix with Toasted Almonds
Ingredients
- ½ cup milk
- 1 large egg
- ½ tsp baking powder
- ¼ tsp vanilla extract
- Pinch of salt
- ¼ cup ricotta cheese
- 4 (1.6-oz) slices sourdough bread
- ½ cup sliced strawberries
- 2 Tbsp honey
Instructions
- Whisk together milk, egg, baking powder, vanilla, and salt in a shallow dish.
- Spread 1 Tbsp ricotta on each bread slice. Arrange strawberries on 2 slices. Drizzle honey over berries. Top with remaining bread, ricotta side down. Dip sandwiches in milk mixture, allowing excess to drip off.
- Heat a griddle or nonstick skillet coated with cooking spray over medium heat. Cook 4 minutes per side or until golden brown.
Side Dish Ingredients
- ¼ cup sliced almonds
- 1 (5-oz) pkg spring mix
- ¼ cup thinly sliced red onion
- 2 Tbsp vegetarian balsamic vinaigrette
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat until fragrant; cool. Toss together spring mix, onion, and nuts in a bowl. Drizzle with desired amount of vinaigrette; toss.
