Italian Chicken Sausage with Breakfast Greens

Ingredients

  • 1 (12-oz) pkg fully cooked Italian chicken sausage, thinly sliced
  • ¼ cup olive oil
  • 12 oz chopped kale
  • ½ cup low-sodium chicken broth
  • 2 Tbsp fresh lemon juice
  • 2 tsp soy sauce
  • ½ tsp crushed red pepper

Instructions

  1. Cook sausage in hot oil in a Dutch oven over medium-high heat 5 to 6 minutes or until browned and thoroughly heated.
  2. Remove sausage, and set aside, reserving drippings in pot.
  3. Add kale, broth, lemon juice, soy sauce, and red pepper to hot drippings. Cook 2 to 3 minutes or until kale is wilted, stirring often. Serve kale with sausage.
