Citrus-Nut Salad

Ingredients

  • 1 (18-oz) pkg romaine salad
  • 1 head fennel, cored and slices (about 2 cups)
  • 1 cup sliced almonds
  • ¾ cup lightly salted pistachios, chopped
  • 2 mangos, peeled and sliced
  • 1 grapefruit, sectioned
  • 2 oranges, sectioned
  • 2 avocados, diced
  • ½ cup vegan olive oil vinaigrette

Instructions

  1. Toss together romaine, fennel, both nuts, mangos, grapefruit, oranges, and avocados in a large bowl.
  2. Drizzle desired amount of vinaigrette over salad, and gently toss.

  • 1 (12-oz) French baguette

Side Dish Instructions

  1. Preheat oven to 400°F. Wrap baguette in foil.
  2. Bake 8 to 10 minutes or until crispy. Slice to serve.
