Citrus-Nut Salad
Crusty French Baguette
Ingredients
- 1 (18-oz) pkg romaine salad
- 1 head fennel, cored and slices (about 2 cups)
- 1 cup sliced almonds
- ¾ cup lightly salted pistachios, chopped
- 2 mangos, peeled and sliced
- 1 grapefruit, sectioned
- 2 oranges, sectioned
- 2 avocados, diced
- ½ cup vegan olive oil vinaigrette
Instructions
- Toss together romaine, fennel, both nuts, mangos, grapefruit, oranges, and avocados in a large bowl.
- Drizzle desired amount of vinaigrette over salad, and gently toss.

- 1 (12-oz) French baguette
Side Dish Instructions
- Preheat oven to 400°F. Wrap baguette in foil.
- Bake 8 to 10 minutes or until crispy. Slice to serve.
