Turkey Larb
Spicy Cucumbers and Bell Pepper
Ingredients
- ½ cup thinly sliced red onion
- 1 Tbsp minced ginger
- 1 jalapeño pepper, seeded and minced
- 1 Tbsp sesame oil
- 1 (20-oz) pkg ground turkey
- ½ cup fresh lime juice
- 2 Tbsp fish sauce
- 2 Tbsp raw honey
- ½ cup chopped fresh cilantro
- ¼ cup chopped fresh mint
- 1 small head cabbage, leaves separated
Instructions
- Cook onion, ginger, and jalapeño in hot sesame oil in a large skillet over medium-high heat 3 minutes. Add turkey; cook 8 minutes or until browned and crumbly.
- Stir in lime juice, fish sauce, and honey; cook 1 minute. Stir in cilantro and mint. Serve turkey mixture on cabbage leaves.
Side Dish Ingredients
- 2 Tbsp rice wine vinegar
- 1 tsp raw honey
- ⅛ tsp crushed red pepper
- 2 English cucumbers, thinly sliced
- 1 red bell pepper, finely chopped
Side Dish Instructions
- Whisk together vinegar, honey, and crushed red pepper in a large bowl; add cucumbers and bell pepper, and toss. Season with salt to taste.
