Turkey Larb

Spicy Cucumbers and Bell Pepper

Ingredients

  • ½ cup thinly sliced red onion
  • 1 Tbsp minced ginger
  • 1 jalapeño pepper, seeded and minced
  • 1 Tbsp sesame oil
  • 1 (20-oz) pkg ground turkey
  • ½ cup fresh lime juice
  • 2 Tbsp fish sauce
  • 2 Tbsp raw honey
  • ½ cup chopped fresh cilantro
  • ¼ cup chopped fresh mint
  • 1 small head cabbage, leaves separated

Instructions

  1. Cook onion, ginger, and jalapeño in hot sesame oil in a large skillet over medium-high heat 3 minutes. Add turkey; cook 8 minutes or until browned and crumbly.
  2. Stir in lime juice, fish sauce, and honey; cook 1 minute. Stir in cilantro and mint. Serve turkey mixture on cabbage leaves.

Side Dish Ingredients

  • 2 Tbsp rice wine vinegar
  • 1 tsp raw honey
  • ⅛ tsp crushed red pepper
  • 2 English cucumbers, thinly sliced
  • 1 red bell pepper, finely chopped

Side Dish Instructions

  1. Whisk together vinegar, honey, and crushed red pepper in a large bowl; add cucumbers and bell pepper, and toss. Season with salt to taste.
