Bacon-Burger Chopped Salads
Fresh Tomato DressingIngredients
- 1 lb lean ground beef
- ½ tsp salt
- ½ tsp pepper
- 6 slices center cut bacon
- 1 (10-oz) pkg chopped romaine lettuce
- 1 small red onion, sliced
- 1 English cucumber, sliced
- Fresh Tomato Dressing (recipe follows)
Instructions
- Mix together beef, salt, and pepper; shape into 4 thin patties.
- Cook patties in a large nonstick skillet over medium heat 5 minutes per side or until no longer pink in centers; cool and coarsely crumble burgers.
- Wipe skillet clean. Cook bacon in skillet 6 minutes or until crisp; crumble.
- Combine lettuce, crumbled hamburger, bacon, onion, and cucumber; toss. Serve with Fresh Tomato Dressing recipe.
Side Dish Ingredients
- 2 Roma tomatoes, finely chopped
- 1 Tbsp red wine vinegar
- 1 clove garlic, halved
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup olive oil
Side Dish Instructions
- Blend tomatoes, vinegar, garlic, salt, and pepper in a blender.
- With lid on and blender running, slowly drizzle in oil through the center opening in lid.
- Serve dressing with salad.
