Bacon-Burger Chopped Salads

Fresh Tomato Dressing

Ingredients

  • 1 lb lean ground beef
  • ½ tsp salt
  • ½ tsp pepper
  • 6 slices center cut bacon
  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 small red onion, sliced
  • 1 English cucumber, sliced
  • Fresh Tomato Dressing (recipe follows)

Instructions

  1. Mix together beef, salt, and pepper; shape into 4 thin patties.
  2. Cook patties in a large nonstick skillet over medium heat 5 minutes per side or until no longer pink in centers; cool and coarsely crumble burgers.
  3. Wipe skillet clean. Cook bacon in skillet 6 minutes or until crisp; crumble.
  4. Combine lettuce, crumbled hamburger, bacon, onion, and cucumber; toss. Serve with Fresh Tomato Dressing recipe.

Side Dish Ingredients

  • 2 Roma tomatoes, finely chopped
  • 1 Tbsp red wine vinegar
  • 1 clove garlic, halved
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup olive oil

Side Dish Instructions

  1. Blend tomatoes, vinegar, garlic, salt, and pepper in a blender.
  2. With lid on and blender running, slowly drizzle in oil through the center opening in lid.
  3. Serve dressing with salad.
