Strawberry-Avocado Cobb Salad

Ingredients

  • 4 large eggs
  • 1 (16-oz) pkg bacon, chopped
  • 1 (3-count) pkg romaine lettuce hearts, chopped
  • 1 (16-oz) pkg cubed ham, drained
  • 1 (8-oz) pkg sliced smoked turkey, chopped
  • 2 avocados, sliced
  • 1 (16-oz) pkg strawberries, sliced
  • 1 cup balsamic vinaigrette

Instructions

  1. Place eggs in a single layer in a small saucepan. Add water to cover; bring to a boil. Remove from heat; let stand, covered, 15 minutes.
  2. Drain; run cold water over eggs. Peel and cut eggs in quarters.
  3. Meanwhile, cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  4. Arrange lettuce on 6 plates; top with ham, turkey, bacon, avocados, strawberries, and eggs. Drizzle with vinaigrette.

  • 6 French steak rolls
  • 3 Tbsp butter

Side Dish Instructions

  1. Heat rolls according to package directions; serve warm with butter.
