Lasagna Roll-Ups
Caesar Salad and Garlic Bread
Ingredients
- 1 (16-oz) pkg lasagna noodles
- 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
- 1 (15-oz) container ricotta cheese
- 1 large egg
- ½ cup shredded Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 (24-oz) jar pasta sauce, divided
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions.
- Combine spinach, ricotta, egg, Parmesan, garlic, and seasoning in a bowl; season lightly with salt and pepper.
- Spread 1 cup pasta sauce in bottom of a lightly greased 13- x 9-inch baking dish.
- Spread ricotta mixture over each lasagna noodle. Roll up, and place noodles, seam side down, over sauce in baking dish. Top with remaining sauce.
- Cover and bake 30 minutes. Uncover, sprinkle with mozzarella, and bake 15 minutes longer.
