Lasagna Roll-Ups

Caesar Salad and Garlic Bread

Ingredients

  • 1 (16-oz) pkg lasagna noodles
  • 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • 1 (15-oz) container ricotta cheese
  • 1 large egg
  • ½ cup shredded Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 (24-oz) jar pasta sauce, divided
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions.
  2. Combine spinach, ricotta, egg, Parmesan, garlic, and seasoning in a bowl; season lightly with salt and pepper.
  3. Spread 1 cup pasta sauce in bottom of a lightly greased 13- x 9-inch baking dish.
  4. Spread ricotta mixture over each lasagna noodle. Roll up, and place noodles, seam side down, over sauce in baking dish. Top with remaining sauce.
  5. Cover and bake 30 minutes. Uncover, sprinkle with mozzarella, and bake 15 minutes longer.
