One-Pan Roasted Salmon and Vegetables

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 yellow squash, sliced
  • ½ red onion, thinly sliced
  • 1 pint grape tomatoes
  • 6 Tbsp olive oil, divided
  • 3 cloves garlic, minced
  • ½ tsp crushed red pepper
  • 1 (1½-lb) salmon fillet
  • ½ tsp salt
  • ½ tsp pepper
  • 1 lemon, thinly sliced

Instructions

  1. Preheat oven to 400°F. Toss together broccoli, squash, onion, tomatoes, ¼ cup oil, and red pepper over a large rimmed baking sheet lined with parchment paper.
  2. Spread vegetables in a single layer on one half of baking sheet. Place salmon on opposite half of baking sheet; brush with 2 Tbsp oil. Lightly sprinkle salmon and vegetables with salt and pepper.
  3. Layer lemon slices over salmon. Bake 18 to 22 minutes or until salmon flakes with a fork and vegetables are golden.
