One-Pan Roasted Salmon and Vegetables

Ingredients
- 1 (12-oz) pkg broccoli florets
- 2 yellow squash, sliced
- ½ red onion, thinly sliced
- 1 pint grape tomatoes
- 6 Tbsp olive oil, divided
- 3 cloves garlic, minced
- ½ tsp crushed red pepper
- 1 (1½-lb) salmon fillet
- ½ tsp salt
- ½ tsp pepper
- 1 lemon, thinly sliced
Instructions
- Preheat oven to 400°F. Toss together broccoli, squash, onion, tomatoes, ¼ cup oil, and red pepper over a large rimmed baking sheet lined with parchment paper.
- Spread vegetables in a single layer on one half of baking sheet. Place salmon on opposite half of baking sheet; brush with 2 Tbsp oil. Lightly sprinkle salmon and vegetables with salt and pepper.
- Layer lemon slices over salmon. Bake 18 to 22 minutes or until salmon flakes with a fork and vegetables are golden.
