Spanish Chicken Skillet
Green Pea RiceIngredients
- 1½ lb ground chicken (or use turkey)
- 2 cups frozen seasoning blend (diced onion, bell peppers, and celery)
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 2 Tbsp chili powder
- 1 tsp ground coriander
- ½ tsp salt
- ½ tsp pepper
- 1 (14.5-oz) can diced tomatoes, drained
- ½ cup chopped fresh cilantro (optional)
Instructions
- Cook chicken, seasoning blend, and garlic in hot oil in a large skillet over medium-high heat 8 minutes or until chicken is browned and crumbly.
- Stir in chili powder, coriander, salt, and pepper; cook 1 minute. Stir in tomatoes and, if desired, cilantro; cook 4 minutes or until thoroughly heated.
Side Dish Ingredients
- 2 (8.8-oz) pkg microwavable brown rice
- 2 cups frozen green peas
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Microwave rice and peas according to package directions.
- Toss together rice, peas, salt, and pepper in a serving bowl.
