Ingredients

  • 1½ lb ground chicken (or use turkey)
  • 2 cups frozen seasoning blend (diced onion, bell peppers, and celery)
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 Tbsp chili powder
  • 1 tsp ground coriander
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (14.5-oz) can diced tomatoes, drained
  • ½ cup chopped fresh cilantro (optional)

Instructions

  1. Cook chicken, seasoning blend, and garlic in hot oil in a large skillet over medium-high heat 8 minutes or until chicken is browned and crumbly.
  2. Stir in chili powder, coriander, salt, and pepper; cook 1 minute. Stir in tomatoes and, if desired, cilantro; cook 4 minutes or until thoroughly heated.

Side Dish Ingredients

  • 2 (8.8-oz) pkg microwavable brown rice
  • 2 cups frozen green peas
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Microwave rice and peas according to package directions.
  2. Toss together rice, peas, salt, and pepper in a serving bowl.
