Barbecue Chip Chicken Tenders

Ingredients

  • 2 cups barbecue sauce, divided
  • 1 (8-oz) pkg kettle-cooked barbecue flavored potato chips, crushed
  • ½ cup grated Parmesan cheese
  • 1 tsp salt
  • 2 lb chicken tenderloins

Instructions

  1. Preheat oven to 400°F. Place 1 cup barbecue sauce in a shallow bowl. Stir together chips, cheese, and salt in a second shallow bowl.
  2. Dip chicken in sauce; dredge in potato chip mixture, pressing gently to adhere.
  3. Place on a greased wire rack on a rimmed baking sheet. Let stand 20 minutes to set crust.
  4. Bake 15 to 18 minutes or until chicken is browned and done. Serve with remaining barbecue sauce for dipping.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp butter
  • 1 Tbsp lemon juice
  • 2 (21-oz) cartons refrigerated macaroni and cheese

Side Dish Instructions

  1. Cook broccoli according to package directions; toss with butter and lemon juice. Season with salt and pepper to taste.
  2. Heat macaroni and cheese according to package directions.
