Barbecue Chip Chicken Tenders
Lemon-Butter Broccoli and Macaroni and CheeseIngredients
- 2 cups barbecue sauce, divided
- 1 (8-oz) pkg kettle-cooked barbecue flavored potato chips, crushed
- ½ cup grated Parmesan cheese
- 1 tsp salt
- 2 lb chicken tenderloins
Instructions
- Preheat oven to 400°F. Place 1 cup barbecue sauce in a shallow bowl. Stir together chips, cheese, and salt in a second shallow bowl.
- Dip chicken in sauce; dredge in potato chip mixture, pressing gently to adhere.
- Place on a greased wire rack on a rimmed baking sheet. Let stand 20 minutes to set crust.
- Bake 15 to 18 minutes or until chicken is browned and done. Serve with remaining barbecue sauce for dipping.

- 2 (12-oz) pkg broccoli florets
- 3 Tbsp butter
- 1 Tbsp lemon juice
- 2 (21-oz) cartons refrigerated macaroni and cheese
Side Dish Instructions
- Cook broccoli according to package directions; toss with butter and lemon juice. Season with salt and pepper to taste.
- Heat macaroni and cheese according to package directions.
