Caribbean Pork Tenderloin

Sweet Potato Fries and Pineapple-Kiwi Toss

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • 2 Tbsp olive oil
  • 1 Tbsp Jerk seasoning
  • ½ tsp dried oregano

Instructions

  1. Preheat oven to 400°F. Rub pork with oil, Jerk seasoning, and oregano.
  2. Brown pork on all sides in a large ovenproof skillet over medium-high heat. Transfer skillet to oven, and bake 10 minutes or until a thermometer registers 145°F.
  3. Let pork stand 10 minutes before slicing.

Side Dish Ingredients

  • 1 (20-oz) bag frozen sweet potato fries
  • 1 peeled and cored pineapple, cut into chunks
  • 3 kiwifruit, peeled and sliced

Side Dish Instructions

  1. Bake fries according to package directions.
  2. Toss together pineapple and kiwi just before serving.
