Caribbean Pork Tenderloin
Sweet Potato Fries and Pineapple-Kiwi TossIngredients
- 2 (1-lb) pork tenderloins, trimmed
- 2 Tbsp olive oil
- 1 Tbsp Jerk seasoning
- ½ tsp dried oregano
Instructions
- Preheat oven to 400°F. Rub pork with oil, Jerk seasoning, and oregano.
- Brown pork on all sides in a large ovenproof skillet over medium-high heat. Transfer skillet to oven, and bake 10 minutes or until a thermometer registers 145°F.
- Let pork stand 10 minutes before slicing.
Side Dish Ingredients
- 1 (20-oz) bag frozen sweet potato fries
- 1 peeled and cored pineapple, cut into chunks
- 3 kiwifruit, peeled and sliced
Side Dish Instructions
- Bake fries according to package directions.
- Toss together pineapple and kiwi just before serving.
