Tomato Pork Curry

Ingredients
- 6 (6-oz) boneless pork chops (about 1-inch thick)
- 2 Tbsp olive oil
- 1 (14.5-oz) can fire-roasted diced tomatoes with garlic
- 1 cup coconut milk
- 2 Tbsp red curry paste
Instructions
- Cook pork, in batches, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned. Remove from skillet.
- Add tomatoes, coconut milk, and curry paste to skillet; bring to a boil, reduce heat, and simmer.
- Return pork to skillet, and simmer 5 minutes or until sauce is thickened and pork is done.

- 2 (10-oz) pkg frozen riced cauliflower and broccoli
- 2 Tbsp olive oil
- ½ tsp salt
Side Dish Instructions
- Cook cauliflower rice according to package directions. Stir in oil and salt.
