Ingredients

  • 6 (6-oz) boneless pork chops (about 1-inch thick)
  • 2 Tbsp olive oil
  • 1 (14.5-oz) can fire-roasted diced tomatoes with garlic
  • 1 cup coconut milk
  • 2 Tbsp red curry paste

Instructions

  1. Cook pork, in batches, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned. Remove from skillet.
  2. Add tomatoes, coconut milk, and curry paste to skillet; bring to a boil, reduce heat, and simmer.
  3. Return pork to skillet, and simmer 5 minutes or until sauce is thickened and pork is done.

Side Dish Ingredients

  • 2 (10-oz) pkg frozen riced cauliflower and broccoli 
  • 2 Tbsp olive oil
  • ½ tsp salt

Side Dish Instructions

  1. Cook cauliflower rice according to package directions. Stir in oil and salt.
