Sweet and Sour Fish Sticks

Ingredients

  • ½ (19-oz) pkg frozen breaded fish sticks
  • ½ (14-oz) pkg frozen bell peppers and onions (or use ¼ [22-oz] pkg)
  • ½ cup granulated sugar
  • ¼ cup packed brown sugar
  • ½ cup apple cider vinegar
  • ⅓ cup ketchup
  • 2 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • ¼ tsp crushed red pepper
  • 1 (15.25-oz) can pineapple chunks, drained (or use frozen pineapple chunks)
  • 1 Tbsp toasted sesame seeds

Instructions

  1. Bake fish sticks according to package directions. Cook bell peppers and onion in microwave according to package directions, using the minimal time. Drain well.
  2. Meanwhile, mix together sugar, brown sugar, vinegar, ketchup, soy sauce, garlic, and crushed red pepper in a large skillet; simmer 3 to 4 minutes or until slightly thickened. Add bell peppers and onion and pineapple. Cook 1 to 2 minutes.
  3. Cut fish sticks into pieces, if desired. Add fish sticks to skillet; cook 1 minute. Sprinkle with sesame seeds. Serve over rice.

  • 1 (8.8-oz) pouch microwavable whole-grain brown rice

Side Dish Instructions

  1. Cook rice according to package directions. Transfer to a small bowl, and season with salt and pepper to taste.
