Sweet and Sour Fish Sticks
Easy Brown RiceIngredients
- ½ (19-oz) pkg frozen breaded fish sticks
- ½ (14-oz) pkg frozen bell peppers and onions (or use ¼ [22-oz] pkg)
- ½ cup granulated sugar
- ¼ cup packed brown sugar
- ½ cup apple cider vinegar
- ⅓ cup ketchup
- 2 Tbsp soy sauce
- 1 Tbsp minced garlic
- ¼ tsp crushed red pepper
- 1 (15.25-oz) can pineapple chunks, drained (or use frozen pineapple chunks)
- 1 Tbsp toasted sesame seeds
Instructions
- Bake fish sticks according to package directions. Cook bell peppers and onion in microwave according to package directions, using the minimal time. Drain well.
- Meanwhile, mix together sugar, brown sugar, vinegar, ketchup, soy sauce, garlic, and crushed red pepper in a large skillet; simmer 3 to 4 minutes or until slightly thickened. Add bell peppers and onion and pineapple. Cook 1 to 2 minutes.
- Cut fish sticks into pieces, if desired. Add fish sticks to skillet; cook 1 minute. Sprinkle with sesame seeds. Serve over rice.

- Cook rice according to package directions. Transfer to a small bowl, and season with salt and pepper to taste.
