Basic Pantry Chocolate Cookies

Ingredients
- 1 cup all-purpose flour
- ⅓ cup unsweetened baking cocoa
- ½ tsp baking soda
- ½ tsp salt
- ⅓ cup coconut oil
- ¾ cup packed brown sugar
- 1 tsp vanilla extract
- ¼ cup water
Instructions
- Preheat oven to 350°F. Whisk together flour, cocoa, baking soda, and salt in a large bowl. Set aside.
- Heat coconut oil in microwave 15 to 20 seconds until softened. Beat oil and sugar in a large bowl at medium speed with a handheld mixer until smooth. Beat in vanilla and water. Gradually add flour mixture, beating at low speed until blended.
- Drop dough by tablespoonfuls about 1 inch apart onto a parchment paper-lined baking sheet.
- Bake 10 to 12 minutes or until set; cool on baking sheets 3 to 5 minutes. Transfer to wire racks to cool completely.
