Basic Pantry Chocolate Cookies

Ingredients

  • 1 cup all-purpose flour
  • ⅓ cup unsweetened baking cocoa
  • ½ tsp baking soda
  • ½ tsp salt
  • ⅓ cup coconut oil
  • ¾ cup packed brown sugar
  • 1 tsp vanilla extract
  • ¼ cup water

Instructions

  1. Preheat oven to 350°F. Whisk together flour, cocoa, baking soda, and salt in a large bowl. Set aside.
  2. Heat coconut oil in microwave 15 to 20 seconds until softened. Beat oil and sugar in a large bowl at medium speed with a handheld mixer until smooth. Beat in vanilla and water. Gradually add flour mixture, beating at low speed until blended.
  3. Drop dough by tablespoonfuls about 1 inch apart onto a parchment paper-lined baking sheet.
  4. Bake 10 to 12 minutes or until set; cool on baking sheets 3 to 5 minutes. Transfer to wire racks to cool completely.
