Slow Cooker Chicken Parmesan

Angel Hair Pasta and Garlic Spinach

Ingredients

  • ½ lb boneless, skinless chicken breasts
  • ½ (24-oz) jar marinara sauce
  • 1 Tbsp Italian seasoning
  • ¼ cup freshly grated Parmesan cheese
  • 1 tsp butter
  • ½ cup whole wheat panko breadcrumbs
  • ¼ tsp garlic powder

Instructions

  1. Place chicken in a 3- to 4-quart slow cooker. Stir together marinara and Italian seasoning; pour over chicken.
  2. Cover and cook on LOW 6½ to 7½ hours or until chicken is tender.
  3. Sprinkle cheese over top of chicken; cover and cook on HIGH 30 minutes or until cheese melts.
  4. Melt butter in a nonstick skillet over medium heat; add breadcrumbs and garlic powder, and cook 4 minutes or until golden brown, stirring often.
  5. Sprinkle breadcrumb mixture over chicken just before serving.

Side Dish Ingredients

  • 3 oz whole-grain angel hair pasta
  • 1 cloves garlic, minced
  • 2 tsp olive oil
  • 1 (6-oz) pkg baby spinach

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook garlic in hot oil in a nonstick skillet over medium heat 1 minute, stirring constantly, or until fragrant.
  3. Add spinach to skillet, and cook, stirring often, 2 minutes or until spinach wilts.
