Slow Cooker Chicken Parmesan
Angel Hair Pasta and Garlic Spinach
Ingredients
- ½ lb boneless, skinless chicken breasts
- ½ (24-oz) jar marinara sauce
- 1 Tbsp Italian seasoning
- ¼ cup freshly grated Parmesan cheese
- 1 tsp butter
- ½ cup whole wheat panko breadcrumbs
- ¼ tsp garlic powder
Instructions
- Place chicken in a 3- to 4-quart slow cooker. Stir together marinara and Italian seasoning; pour over chicken.
- Cover and cook on LOW 6½ to 7½ hours or until chicken is tender.
- Sprinkle cheese over top of chicken; cover and cook on HIGH 30 minutes or until cheese melts.
- Melt butter in a nonstick skillet over medium heat; add breadcrumbs and garlic powder, and cook 4 minutes or until golden brown, stirring often.
- Sprinkle breadcrumb mixture over chicken just before serving.
Side Dish Ingredients
- 3 oz whole-grain angel hair pasta
- 1 cloves garlic, minced
- 2 tsp olive oil
- 1 (6-oz) pkg baby spinach
Side Dish Instructions
- Cook pasta according to package directions.
- Meanwhile, cook garlic in hot oil in a nonstick skillet over medium heat 1 minute, stirring constantly, or until fragrant.
- Add spinach to skillet, and cook, stirring often, 2 minutes or until spinach wilts.
