One-Dish Dinner
Moroccan Meatball Bowls
Ingredients
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ¼ tsp ground turmeric
- 1½ lb lean ground beef
- 2 cloves garlic, minced
- ¾ tsp salt, divided
- ½ tsp pepper, divided
- ¼ cup olive oil, divided
- 1 lemon
- 2 (5.8-oz) pkg roasted garlic-and-olive oil whole-grain couscous
- 1 cup organic golden raisins
- 1 (10-oz) pkg organic baby spinach
- 1 (5.3-oz) carton plain Greek yogurt
Instructions
- Combine coriander, cumin, paprika, and turmeric in a small bowl; spoon 2 tsp mixture into a large bowl.
- Combine 2 tsp spice mixture, beef, garlic, ½ tsp salt, and ¼ tsp pepper; shape into 2-inch meatballs.
- Cook meatballs in 2 Tbsp hot oil in a large skillet over medium-high heat 8 to 10 minutes, turning occasionally, or until meatballs are done.
- Meanwhile, grate zest and squeeze juice from lemon. Prepare couscous according to package directions; stir in raisins and lemon zest while couscous stands.
- Toss together warm couscous, spinach, and meatballs in a bowl.
- Stir together yogurt, lemon juice, remaining spice mixture, ¼ tsp salt, ¼ tsp pepper, and 2 Tbsp oil. Drizzle dressing over meatballs.
