Moroccan Meatball Bowls

Ingredients

  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ¼ tsp ground turmeric
  • 1½ lb lean ground beef
  • 2 cloves garlic, minced
  • ¾ tsp salt, divided
  • ½ tsp pepper, divided
  • ¼ cup olive oil, divided
  • 1 lemon
  • 2 (5.8-oz) pkg roasted garlic-and-olive oil whole-grain couscous
  • 1 cup organic golden raisins
  • 1 (10-oz) pkg organic baby spinach
  • 1 (5.3-oz) carton plain Greek yogurt

Instructions

  1. Combine coriander, cumin, paprika, and turmeric in a small bowl; spoon 2 tsp mixture into a large bowl.
  2. Combine 2 tsp spice mixture, beef, garlic, ½ tsp salt, and ¼ tsp pepper; shape into 2-inch meatballs.
  3. Cook meatballs in 2 Tbsp hot oil in a large skillet over medium-high heat 8 to 10 minutes, turning occasionally, or until meatballs are done.
  4. Meanwhile, grate zest and squeeze juice from lemon. Prepare couscous according to package directions; stir in raisins and lemon zest while couscous stands.
  5. Toss together warm couscous, spinach, and meatballs in a bowl.
  6. Stir together yogurt, lemon juice, remaining spice mixture, ¼ tsp salt, ¼ tsp pepper, and 2 Tbsp oil. Drizzle dressing over meatballs.
