Cajun Beef Chili

Ingredients

  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 4 cloves garlic, minced
  • 3 lb beef stew meat
  • 1 tsp Cajun seasoning
  • ½ tsp black pepper
  • 1 (14.5-oz) can diced tomatoes
  • 1 (14.5-oz) can organic beef broth

Instructions

  1. Combine onion, bell pepper, and garlic in a 5-or 6-quart slow cooker. Place beef over vegetables. Sprinkle with Cajun seasoning and pepper. Pour tomatoes and broth over beef.
  2. Cover and cook on LOW 6 hours or until beef is tender.

Side Dish Ingredients

  • 2 large sweet potatoes, peeled
  • 3 Tbsp avocado oil
  • 1 tsp salt
  • 1 tsp paprika
  • ¼ tsp cayenne pepper
  • 2 cloves garlic, minced

Side Dish Instructions

  1. Preheat oven to 450°F. Cut potatoes into ½-inch-thick wedges.
  2. Combine potato wedges, oil, salt, paprika, cayenne pepper, and garlic on a rimmed baking sheet; spread in a single layer.
  3. Bake 30 minutes or until tender, stirring once.
