Cajun Beef Chili
Spicy Sweet Potato FriesIngredients
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 4 cloves garlic, minced
- 3 lb beef stew meat
- 1 tsp Cajun seasoning
- ½ tsp black pepper
- 1 (14.5-oz) can diced tomatoes
- 1 (14.5-oz) can organic beef broth
Instructions
- Combine onion, bell pepper, and garlic in a 5-or 6-quart slow cooker. Place beef over vegetables. Sprinkle with Cajun seasoning and pepper. Pour tomatoes and broth over beef.
- Cover and cook on LOW 6 hours or until beef is tender.

- 2 large sweet potatoes, peeled
- 3 Tbsp avocado oil
- 1 tsp salt
- 1 tsp paprika
- ¼ tsp cayenne pepper
- 2 cloves garlic, minced
Side Dish Instructions
- Preheat oven to 450°F. Cut potatoes into ½-inch-thick wedges.
- Combine potato wedges, oil, salt, paprika, cayenne pepper, and garlic on a rimmed baking sheet; spread in a single layer.
- Bake 30 minutes or until tender, stirring once.
