Sweet-Hot Chicken
Blue Cheese-Almond Green Beans and Sliced Peaches
Ingredients
- 1½ lb boneless, skinless chicken breasts, cut in half lengthwise
- 1½ tsp ground cumin
- 2 Tbsp Sriracha hot sauce
- 1 Tbsp low-sodium soy sauce
- 1 Tbsp sugar
Instructions
- Pound chicken to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Coat both sides of chicken with cooking spray, and sprinkle with cumin.
- Cook chicken in a large nonstick skillet over medium-high heat 6 minutes per side or until done.
- Meanwhile, combine hot sauce, soy sauce, and sugar in a small bowl. Spoon sauce over chicken.

- ½ cup slivered almonds
- 2 (12-oz) pkg green beans
- ½ cup water
- 1½ Tbsp extra virgin olive oil
- ½ cup crumbled reduced-fat blue cheese
- ¼ tsp salt
- ¼ tsp pepper
- 6 cups sliced peaches
- 1 lemon, cut into 6 wedges
Side Dish Instructions
- Cook nuts in a large nonstick skillet over medium high heat 2 minutes to browned, stirring often; remove from skillet.
- Bring beans and water to a boil in the skillet. Reduce heat; cover and cook 3 minutes or until beans are crisp-tender.
- Uncover; cook 3 minutes longer or until liquid evaporates.
- Add oil; cook 1 minute. Toss with cheese, almonds, salt, and pepper.
- Divide beans and peaches among 6 plates; squeeze lemon wedges over peaches.
