Ingredients
- 6 oz whole-grain rotini pasta
- 8 slices center cut bacon
- 1 avocado
- ¼ cup reduced-fat mayonnaise
- ¼ cup 1% low-fat milk
- 2 Tbsp chopped fresh flat-leaf parsley
- 2 tsp white vinegar
- ¼ tsp garlic salt
- ½ tsp pepper
- 1 pint grape tomatoes, halved
- ½ cup chopped red onion
Instructions
- Cook pasta according to package directions; drain and rinse with cold water.
- Cook bacon in a large nonstick skillet over medium heat 6 minutes or until crisp; drain and crumble.
- Mash avocado in a bowl until smooth. Stir in mayonnaise, milk, parsley, vinegar, garlic salt, and pepper until well blended.
- Stir in pasta, bacon, tomatoes and onion. Chill until ready to serve.
