Ingredients

  • 6 oz whole-grain rotini pasta
  • 8 slices center cut bacon
  • 1 avocado
  • ¼ cup reduced-fat mayonnaise
  • ¼ cup 1% low-fat milk
  • 2 Tbsp chopped fresh flat-leaf parsley
  • 2 tsp white vinegar
  • ¼ tsp garlic salt
  • ½ tsp pepper
  • 1 pint grape tomatoes, halved
  • ½ cup chopped red onion

Instructions

  1. Cook pasta according to package directions; drain and rinse with cold water.
  2. Cook bacon in a large nonstick skillet over medium heat 6 minutes or until crisp; drain and crumble.
  3. Mash avocado in a bowl until smooth. Stir in mayonnaise, milk, parsley, vinegar, garlic salt, and pepper until well blended.
  4. Stir in pasta, bacon, tomatoes and onion. Chill until ready to serve.
