Sun-Dried Tomato Beef Burgers

Ingredients

  • 1 (8.5-oz) jar oil-packed sun-dried tomatoes
  • 2 lb ground beef
  • 1 Tbsp Italian seasoning
  • 6 slices mozzarella cheese
  • 2 onions, thinly sliced
  • 3 Tbsp balsamic vinegar
  • 6 leaves green leaf lettuce
  • 6 hamburger buns, split and toasted

Instructions

  1. Drain tomatoes, reserving 3 Tbsp oil from jar. Finely chop tomatoes. Combine beef, Italian seasoning, and chopped tomatoes in a large bowl; shape mixture into 6 patties.
  2. Cook patties in a large skillet over medium-high heat until no longer pink; top each with 1 slice cheese, and let stand until melted.
  3. Meanwhile, cook onions in hot reserved oil (from jar) in a large skillet over medium heat 15 to 20 minutes or until very tender. Stir in vinegar, and cook 2 minutes.
  4. Serve cheese-topped patties, onions, and lettuce on toasted buns.

Side Dish Ingredients

  • 1 (32-oz) pkg frozen French fries
  • 1 cup ketchup
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp brown sugar
  • ½ tsp ground mustard

Side Dish Instructions

  1. Bake fries according to package directions; season with salt and pepper to taste.
  2. Stir together ketchup, vinegar, brown sugar, and mustard in a bowl. Serve with fries.
