Beef Ramen Noodles

Ingredients

  • 3 (3-oz) pkg instant beef ramen noodles
  • 1 lb ground beef
  • 4 cloves garlic, minced
  • 1 (20-oz) pkg frozen broccoli stir-fry
  • 1¼ cups beef broth
  • ½ cup soy sauce
  • ¼ cup packed brown sugar
  • 2 Tbsp cornstarch
  • 1 tsp ground ginger

Instructions

  1. Discard seasoning packet from noodles. Cook noodles according to package directions.
  2. Meanwhile, cook beef and garlic in a large, deep skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Add stir-fry mix to skillet; cover and cook 3 minutes.
  3. Meanwhile, whisk together broth, soy sauce, brown sugar, cornstarch, and ginger in a bowl. Add to skillet, and cook, stirring occasionally, until sauce is thickened and vegetables are thoroughly heated. Toss with hot cooked noodles.

Side Dish Ingredients

  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 (10-oz) pkg shredded carrots
  • 1 (3.5-oz) pkg crispy wonton strips
  • ½ cup sesame-ginger dressing

Side Dish Instructions

  1. Toss together all ingredients just before serving.
