Orange-Rosemary Pork Tenderloin

Garlic and Olive Oil Pasta and Parmesan Broccoli

Ingredients

  • ¼ cup orange juice
  • ¼ cup olive oil
  • 2 Tbsp chopped fresh rosemary
  • 3 cloves garlic, minced
  • 2 (1-lb) pork tenderloins, trimmed

Instructions

  1. Combine all ingredients in a zip-top plastic bag; seal and chill at least 4 hours or up to 12 hours.
  2. Remove pork from marinade, discarding marinade; let stand at room temperature 30 minutes.
  3. Preheat oven to 400°F. Cook pork in an ovenproof skillet over medium-high heat 3 to 4 minutes per side or until browned.
  4. Place skillet in oven, and bake 15 minutes or until a meat thermometer inserted in thickest portion registers 145°F. Let stand 10 minutes before slicing.

  • 2 (4.6-oz) boxes garlic and olive oil pasta
  • 2 (12-oz) pkg frozen broccoli florets
  • ½ cup grated Parmesan cheese

Side Dish Instructions

  1. Cook pasta according to pkg directions.
  2. Steam broccoli according to package directions; sprinkle with cheese, and season with salt and pepper to taste.
