Grilled Chicken Cordon Bleu

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ¼ cup honey mustard
  • ½ lb thinly sliced deli sweet ham
  • 1 (7-oz) pkg sliced Swiss cheese (or use mozzarella)

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Pound chicken breasts to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; brush with oil and season lightly with salt and pepper.
  3. Grill chicken, covered, 5 to 6 minutes per side or until done.
  4. Brush chicken with honey mustard. Top with ham slices and cheese. Cook, covered, 2 minutes or until cheese is melted.

Side Dish Ingredients

  • 1 (32-oz) carton refrigerated mashed potatoes
  • 1 (16-oz) pkg frozen broccoli florets

Side Dish Instructions

  1. Heat potatoes according to package directions.
  2. Cook broccoli according to package directions; season with salt and pepper to taste.
