Grilled Chicken Cordon Bleu
Mashed Potatoes and Broccoli
Ingredients
- 2 lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- ¼ cup honey mustard
- ½ lb thinly sliced deli sweet ham
- 1 (7-oz) pkg sliced Swiss cheese (or use mozzarella)
Instructions
- Preheat grill or grill pan to medium-high heat.
- Pound chicken breasts to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; brush with oil and season lightly with salt and pepper.
- Grill chicken, covered, 5 to 6 minutes per side or until done.
- Brush chicken with honey mustard. Top with ham slices and cheese. Cook, covered, 2 minutes or until cheese is melted.

- 1 (32-oz) carton refrigerated mashed potatoes
- 1 (16-oz) pkg frozen broccoli florets
Side Dish Instructions
- Heat potatoes according to package directions.
- Cook broccoli according to package directions; season with salt and pepper to taste.
