Chicken Sausage and Grits Bowls

Ingredients

  • ¾ cup quick-cooking grits
  • ⅓ cup freshly shredded Parmesan cheese
  • ½ tsp garlic salt
  • 1 pint grape tomatoes, halved
  • 1 tsp olive oil
  • 2 (3-oz) fully cooked apple-chicken sausage links, thinly sliced
  • 2 green onions, chopped

Instructions

  1. Prepare grits according to package directions. Stir in cheese and garlic salt until blended.
  2. Sauté tomatoes in hot oil in a large skillet over medium-high heat 3 minutes or until softened. Add sausage; sauté 4 minutes or until thoroughly heated. Stir in green onions.
  3. Spoon 1 cup grits onto each of 4 plates. Spoon sausage mixture over grits.
