Mozzarella Veggie Scramble

Ingredients
- 8 large eggs
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup frozen veggie crumbles
- ½ onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- ½ cup shredded part-skim mozzarella cheese
- 1 green onion, chopped
Instructions
- Whisk together eggs, salt, and pepper; set aside.
- Cook crumbles, onion, and bell pepper in a large nonstick skillet over medium heat 9 minutes or until browned.
- Add garlic and mushrooms to skillet; cook 1 minute. Add egg mixture to skillet; cook 2 minutes, without stirring, until beginning to set on bottom.
- Draw a spatula through eggs to form large curds. Cook just until thickened. Sprinkle with cheese and onion.
