Crispy Italian Fish Bowls
Ingredients
- 12 frozen Parmesan-crusted fish fillets
- 1 cup long-grain brown rice
- 1 tsp Italian seasoning
- 1 (5-oz) pkg spring mix
- 1 pint grape tomatoes, halved
- 1 English cucumber, cut into half moons
- 1 (8-oz) pkg mozzarella cheese pearls
- 2 (0.5-oz) pkg fresh basil, chopped
- 2 Tbsp extra virgin olive oil
- 2 Tbsp balsamic glaze
Instructions
- Bake fish and cook rice according to package directions. Toss rice with Italian seasoning.
- Divide rice, fish, greens, tomatoes, cucumber, cheese, and basil among 6 serving bowls. Serve drizzled with oil and glaze.
