Crispy Italian Fish Bowls

Ingredients

  • 12 frozen Parmesan-crusted fish fillets
  • 1 cup long-grain brown rice
  • 1 tsp Italian seasoning
  • 1 (5-oz) pkg spring mix
  • 1 pint grape tomatoes, halved
  • 1 English cucumber, cut into half moons
  • 1 (8-oz) pkg mozzarella cheese pearls
  • 2 (0.5-oz) pkg fresh basil, chopped
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp balsamic glaze

Instructions

  1. Bake fish and cook rice according to package directions. Toss rice with Italian seasoning.
  2. Divide rice, fish, greens, tomatoes, cucumber, cheese, and basil among 6 serving bowls. Serve drizzled with oil and glaze.
