Tzatziki-Chickpea Farro Bowls

Ingredients

  • ½ cup quick-cooking farro
  • 1 cup chickpeas, drained and rinsed
  • 2 tsp olive oil
  • ½ cup sliced roasted red peppers
  • ½ tsp Italian seasoning
  • ¼ cup chopped pitted kalamata olives
  • ½ cup tzatziki sauce
  • 3 Tbsp chopped fresh parsley (optional)

Instructions

  1. Cook farro according to package directions.
  2. Meanwhile, cook chickpeas in hot oil in a skillet over medium-high heat 10 to 12 minutes or until lightly browned. Stir in peppers and Italian seasoning; cook until thoroughly heated.
  3. Divide farro between 2 bowls. Top with chickpea mixture, olives, tzatziki sauce, and, if desired, parsley.

Side Dish Ingredients

  • 2 cups spinach
  • ¾ cup halved grape tomatoes
  • 3 Tbsp sliced almonds
  • 3 Tbsp lemon vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
