Asian Pork Meatball Lettuce Wraps

Ingredients
- 1½ lb ground pork
- 1 large egg, lightly beaten
- 2 Tbsp chopped green onion
- 5 Tbsp low-sodium soy sauce, divided
- 4 Tbsp dark sesame oil, divided
- 1 tsp ground ginger
- 3 Tbsp coconut oil (or use olive oil)
- 2 Tbsp water
- 2 Tbsp fresh lime juice
- 1 head Bibb lettuce
- ¼ cup grated carrots
- ¼ cup chopped fresh cilantro
Instructions
- Combine pork, egg, onion, 1 Tbsp soy sauce, 2 Tbsp sesame oil, and ginger in a medium bowl. Gently mix until just combined. Roll mixture into 1-inch balls.
- Cook meatballs, in batches, in hot coconut oil in a nonstick skillet over medium-high heat 4 to 5 minutes or until browned on all sides and centers are no longer pink.
- Meanwhile, whisk together water, lime juice, ¼ cup soy sauce, and 2 Tbsp sesame oil.
- Separate lettuce leaves. Top with meatballs and carrots; sprinkle with cilantro.
