Asian Pork Meatball Lettuce Wraps

Ingredients

  • 1½ lb ground pork
  • 1 large egg, lightly beaten
  • 2 Tbsp chopped green onion
  • 5 Tbsp low-sodium soy sauce, divided
  • 4 Tbsp dark sesame oil, divided
  • 1 tsp ground ginger
  • 3 Tbsp coconut oil (or use olive oil)
  • 2 Tbsp water
  • 2 Tbsp fresh lime juice
  • 1 head Bibb lettuce
  • ¼ cup grated carrots
  • ¼ cup chopped fresh cilantro

Instructions

  1. Combine pork, egg, onion, 1 Tbsp soy sauce, 2 Tbsp sesame oil, and ginger in a medium bowl. Gently mix until just combined. Roll mixture into 1-inch balls.
  2. Cook meatballs, in batches, in hot coconut oil in a nonstick skillet over medium-high heat 4 to 5 minutes or until browned on all sides and centers are no longer pink.
  3. Meanwhile, whisk together water, lime juice, ¼ cup soy sauce, and 2 Tbsp sesame oil.
  4. Separate lettuce leaves. Top with meatballs and carrots; sprinkle with cilantro.
