Mediterranean Egg Salad with Sliced Cucumber
Ingredients
- 8 large eggs
- ¼ cup oil-packed sun-dried tomatoes, drained and chopped
- ¼ cup pitted kalamata olives, chopped
- 2 Tbsp mayonnaise
- 2 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1 tsp dried oregano
- ¼ tsp salt
- ¼ tsp pepper
- 1 English cucumber, sliced
Instructions
- Place eggs in a single layer in a large saucepan; add water to cover. Bring to a boil. Remove from heat; let stand, covered, 15 minutes.
- Drain; run cold water over eggs. Peel and coarsely chop eggs.
- Combine eggs, tomatoes, olives, mayonnaise, oil, lemon juice, and oregano. Sprinkle with salt and pepper. Chill until ready to serve.
- Serve egg salad with cucumber slices.
