Mediterranean Egg Salad with Sliced Cucumber

Ingredients

  • 8 large eggs
  • ¼ cup oil-packed sun-dried tomatoes, drained and chopped
  • ¼ cup pitted kalamata olives, chopped
  • 2 Tbsp mayonnaise
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • 1 tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 English cucumber, sliced

Instructions

  1. Place eggs in a single layer in a large saucepan; add water to cover. Bring to a boil. Remove from heat; let stand, covered, 15 minutes.
  2. Drain; run cold water over eggs. Peel and coarsely chop eggs.
  3. Combine eggs, tomatoes, olives, mayonnaise, oil, lemon juice, and oregano. Sprinkle with salt and pepper. Chill until ready to serve.
  4. Serve egg salad with cucumber slices.
