Antipasto Skewers
Balsamic VinaigretteIngredients
- ¾ lb deli-sliced low-sodium turkey breast
- 4 oz sliced salami
- 1 English cucumber, halved and cut into ½-inch-thick slices
- 1 cup grape tomatoes
- ¼ cup pitted kalamata olives
Instructions
- Cut turkey and salami into 2-inch strips; roll up each strip.
- Alternately thread turkey rolls, salami rolls, cucumber, tomatoes, and olives onto 6-inch bamboo skewers or other wooden picks.
- Serve skewers with Balsamic Vinaigrette recipe.

- ¼ cup extra virgin olive oil
- 1 Tbsp balsamic vinegar
- 1 Tbsp fresh lemon juice
- ½ tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Whisk together oil, vinegar, lemon juice, mustard, salt, and pepper. Serve dressing with antipasto skewers.
