Antipasto Skewers

Ingredients

  • ¾ lb deli-sliced low-sodium turkey breast
  • 4 oz sliced salami
  • 1 English cucumber, halved and cut into ½-inch-thick slices
  • 1 cup grape tomatoes
  • ¼ cup pitted kalamata olives

Instructions

  1. Cut turkey and salami into 2-inch strips; roll up each strip.
  2. Alternately thread turkey rolls, salami rolls, cucumber, tomatoes, and olives onto 6-inch bamboo skewers or other wooden picks.
  3. Serve skewers with Balsamic Vinaigrette recipe.

  • ¼ cup extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp fresh lemon juice
  • ½ tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Whisk together oil, vinegar, lemon juice, mustard, salt, and pepper. Serve dressing with antipasto skewers.
