Pesto Pork and Vegetables

Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 1½ lb boneless pork chops, cubed
  • 1 pint grape tomatoes, halved
  • 3 cups baby spinach
  • ¾ cup pesto

Instructions

  1. Cook broccoli according to package directions.
  2. Meanwhile, cook pork and tomatoes in a large skillet coated with cooking spray over medium-high heat 6 minutes or until pork is browned.
  3. Add spinach, broccoli, and pesto; cook 3 to 4 minutes until spinach wilts and pork is done.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen mashed cauliflower
  • ¾ cup freshly shredded Parmesan cheese 
  • 2 green onions, chopped 
  • 1 Tbsp butter

Side Dish Instructions

  1. Microwave cauliflower according to package directions. Stir in cheese, onions, and butter.
