Pesto Pork and Vegetables
Parmesan Cauliflower Mash
Ingredients
- 2 (12-oz) pkg broccoli florets
- 1½ lb boneless pork chops, cubed
- 1 pint grape tomatoes, halved
- 3 cups baby spinach
- ¾ cup pesto
Instructions
- Cook broccoli according to package directions.
- Meanwhile, cook pork and tomatoes in a large skillet coated with cooking spray over medium-high heat 6 minutes or until pork is browned.
- Add spinach, broccoli, and pesto; cook 3 to 4 minutes until spinach wilts and pork is done.
Side Dish Ingredients
- 1 (20-oz) pkg frozen mashed cauliflower
- ¾ cup freshly shredded Parmesan cheese
- 2 green onions, chopped
- 1 Tbsp butter
Side Dish Instructions
- Microwave cauliflower according to package directions. Stir in cheese, onions, and butter.
