Smoky-Sweet Shredded Pork Wraps

Ingredients

  • 1¼ cups diced onion
  • 1½ lb boneless pork loin chops, trimmed
  • 2 Tbsp vegetable oil
  • 1½ tsp ground cumin
  • 1½ tsp smoked paprika (or use regular)
  • ¾ tsp ground cinnamon
  • 1 cup barbecue sauce
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp Dijon mustard
  • 1½ tsp Worcestershire sauce
  • 1 head Bibb or red leaf lettuce, separated into leaves

Instructions

  1. Place onion in a 3- or 4-quart slow cooker coated with cooking spray; arrange pork on onion, overlapping slightly. Drizzle oil over pork; sprinkle with cumin, paprika, and cinnamon.
  2. Cover and cook on LOW 8 hours.
  3. Shred pork using 2 forks.
  4. Stir together barbecue sauce, vinegar, mustard, and Worcestershire sauce in a bowl; add to pork in cooker, stirring well.
  5. Cover and cook on HIGH 30 minutes.
  6. Spoon pork mixture onto lettuce leaves; roll up.

Side Dish Ingredients

  • 4 cups thinly sliced celery
  • ⅔ cup chopped walnuts, toasted
  • 1 small pear, thinly sliced
  • 1 Tbsp olive oil
  • 1 Tbsp fresh lemon juice

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
