Blue Corn Taco Salad

Ingredients

  • 4 ears yellow corn
  • 1 (15.5-oz) can pinto beans, drained and rinsed
  • 1 (15-oz) can black beans, drained and rinsed
  • 2 (10-oz) pkg chopped romaine lettuce
  • 2 cups coarsely crumbled blue corn tortilla chips
  • 1 pint grape tomatoes, halved
  • ½ red onion, sliced
  • 1 cup vegan Ranch dressing

Instructions

  1. Cut kernels from cobs; discard cobs. Combine corn kernels, beans, lettuce, chips, tomatoes, and onion in a large bowl. Divide among 6 plates, and serve with dressing.

Side Dish Ingredients

  • 3 avocados, halved
  • ½ tsp salt
  • 1 Tbsp fresh lime juice

Side Dish Instructions

  1. Arrange avocados, cut sides up, on a platter. Sprinkle with salt; drizzle with lime juice.
