Blue Corn Taco Salad
Avocado Halves with Lime JuiceIngredients
- 4 ears yellow corn
- 1 (15.5-oz) can pinto beans, drained and rinsed
- 1 (15-oz) can black beans, drained and rinsed
- 2 (10-oz) pkg chopped romaine lettuce
- 2 cups coarsely crumbled blue corn tortilla chips
- 1 pint grape tomatoes, halved
- ½ red onion, sliced
- 1 cup vegan Ranch dressing
Instructions
- Cut kernels from cobs; discard cobs. Combine corn kernels, beans, lettuce, chips, tomatoes, and onion in a large bowl. Divide among 6 plates, and serve with dressing.

- 3 avocados, halved
- ½ tsp salt
- 1 Tbsp fresh lime juice
Side Dish Instructions
- Arrange avocados, cut sides up, on a platter. Sprinkle with salt; drizzle with lime juice.
