Spicy Basil Mayo Pork Sandwiches
Asian Slaw and Oven Fries
Ingredients
- 2 (1-lb) pork tenderloins, trimmed
- 1½ Tbsp olive oil
- 6 gluten-free hamburger buns, split
- 1 cup mayonnaise
- ¼ cup chopped fresh basil
- 2 Tbsp Sriracha hot sauce
Instructions
- Preheat grill or grill pan to medium-high heat. Rub pork with oil; sprinkle lightly with salt and pepper.
- Grill pork, covered, 8 minutes per side or until a meat thermometer inserted into thickest portion reads 145°F. Let stand 3 minutes; thinly slice.
- Meanwhile, grill buns, cut sides down, 1 minute or until toasted.
- Stir together mayonnaise, basil, and Sriracha in a small bowl; reserve half of mixture for Oven Fries recipe.
- Spread remaining mayonnaise mixture on buns. Serve pork on buns with desired amount of Asian Slaw recipe.
Side Dish Ingredients
- 1 (32-oz) pkg frozen gluten-free French fries (see Note)
- 1 (16-oz) pkg tricolor coleslaw
- 1 cup thinly sliced peeled cucumber
- ½ cup packed fresh cilantro leaves
- 1 jalapeño pepper, seeded and minced (see Note)
- 2 Tbsp olive oil
- 2 Tbsp rice wine vinegar
Side Dish Instructions
- Bake fries according to package directions. Serve with reserved Spicy Basil Mayonnaise recipe for dipping.
- Meanwhile, toss together remaining ingredients in a bowl; let stand 10 minutes before serving. Season with salt and pepper to taste.
