Parmesan Chicken PIccata
Garlicky Green Beans and CarrotsIngredients
- ¾ lb boneless, skinless chicken breasts, cut in half lengthwise
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp all-purpose flour
- 1 Tbsp olive oil
- 2 Tbsp lemon juice
- 2 Tbsp low-sodium chicken broth
- 1½ Tbsp drained capers
- 1 Tbsp butter
- 2 Tbsp freshly grated Parmesan cheese
Instructions
- Sprinkle chicken with salt, pepper, and flour.
- Cook chicken in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done. Remove chicken from pan.
- Add lemon juice and broth to pan, scraping pan to loosen browned bits. Cook 2 minutes or until liquid is reduced by half.
- Add capers and butter; cook, stirring constantly, 2 minutes or until slightly thickened.
- Spoon sauce over chicken; sprinkle with cheese.
