Parmesan Chicken PIccata

Garlicky Green Beans and Carrots

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut in half lengthwise
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp all-purpose flour
  • 1 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 2 Tbsp low-sodium chicken broth
  • 1½ Tbsp drained capers
  • 1 Tbsp butter
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Sprinkle chicken with salt, pepper, and flour.
  2. Cook chicken in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done. Remove chicken from pan.
  3. Add lemon juice and broth to pan, scraping pan to loosen browned bits. Cook 2 minutes or until liquid is reduced by half.
  4. Add capers and butter; cook, stirring constantly, 2 minutes or until slightly thickened.
  5. Spoon sauce over chicken; sprinkle with cheese.
