Egg-and-Cheese Bagel Sandwiches
Pear, Blueberry, and Banana TossIngredients
- 6 vegetarian everything bagels, split
- 12 large eggs
- 6 Tbsp milk
- 1 Tbsp olive oil
- 6 slices Cheddar cheese
- 2 avocados, sliced
- 2 Roma tomatoes, sliced
Instructions
- Preheat broiler. Place bagels, cut side up, on a rimmed baking sheet. Broil 1 minute or until golden brown.
- Whisk together eggs and milk in a large bowl. Cook eggs in hot oil in a large skillet over medium heat until eggs are just set. If desired, season with salt and pepper to taste.
- Divide cheese among bagels. Top with eggs, avocado, and tomato; add bagel tops.

- 1 pint blueberries
