Egg-and-Cheese Bagel Sandwiches

Ingredients

  • 6 vegetarian everything bagels, split
  • 12 large eggs
  • 6 Tbsp milk
  • 1 Tbsp olive oil
  • 6 slices Cheddar cheese
  • 2 avocados, sliced
  • 2 Roma tomatoes, sliced

Instructions

  1. Preheat broiler. Place bagels, cut side up, on a rimmed baking sheet. Broil 1 minute or until golden brown.
  2. Whisk together eggs and milk in a large bowl. Cook eggs in hot oil in a large skillet over medium heat until eggs are just set. If desired, season with salt and pepper to taste.
  3. Divide cheese among bagels. Top with eggs, avocado, and tomato; add bagel tops.

  • 3 pears, cored and sliced
  • 2 bananas, sliced
  • 1 pint blueberries

Side Dish Instructions

  1. Combine all ingredients just before serving.
