Spinach Turkey Sausage Patties
Roasted Potatoes and Fresh RaspberriesIngredients
- 1 cup chopped onion
- 1½ Tbsp olive oil, divided
- 1 (5-oz) pkg baby spinach
- 1 lb 93% lean ground turkey
- 1 large egg white
- 1 tsp dried rubbed sage
- ¼ tsp salt
- ½ tsp fennel seed, crushed
- ¼ tsp crushed red pepper
Instructions
- Sauté onion in ½ Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or browned and tender. Add spinach; cook 1 to 2 minutes or until wilted.
- Combine spinach mixture, turkey, egg white, sage, salt, fennel seed, and red pepper in a large bowl. Shape into 8 patties.
- Cook patties, in 2 batches, in ½ Tbsp hot oil per batch in a large skillet over medium-high heat 4 minutes per side or until centers are no longer pink.
Side Dish Ingredients
- 1 (20-oz) pkg refrigerated red potato wedges (see Note)
- 2 (6-oz) pkg raspberries
Side Dish Instructions
- Bake potato wedges according to package directions.
- Serve potatoes and raspberries on each plate.
