Spinach Turkey Sausage Patties

Ingredients

  • 1 cup chopped onion
  • 1½ Tbsp olive oil, divided
  • 1 (5-oz) pkg baby spinach
  • 1 lb 93% lean ground turkey
  • 1 large egg white
  • 1 tsp dried rubbed sage
  • ¼ tsp salt
  • ½ tsp fennel seed, crushed
  • ¼ tsp crushed red pepper

Instructions

  1. Sauté onion in ½ Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or browned and tender. Add spinach; cook 1 to 2 minutes or until wilted.
  2. Combine spinach mixture, turkey, egg white, sage, salt, fennel seed, and red pepper in a large bowl. Shape into 8 patties.
  3. Cook patties, in 2 batches, in ½ Tbsp hot oil per batch in a large skillet over medium-high heat 4 minutes per side or until centers are no longer pink.

Side Dish Ingredients

  • 1 (20-oz) pkg refrigerated red potato wedges (see Note)
  • 2 (6-oz) pkg raspberries

Side Dish Instructions

  1. Bake potato wedges according to package directions.
  2. Serve potatoes and raspberries on each plate.
